Seared Pork Tenderloin with Raspberry-Chipotle Glaze – Watch video here


During the summer we like to enjoy all of the outdoor activities the warm weather months have to offer. For most of us, this means there is even less time (and desire) to spend in the kitchen. Still, we need to answer the call, “What’s for dinner?” For me, that means something delicious, healthy and easy. If your answer is to hit speed dial for your favorite take-out restaurant, (I admit this used to be mine too), I can offer you some better options.

People think that making a great meal has to be complicated. It doesn’t. Having a busy career didn’t afford me much time to spend cooking dinner, so I learned to adapt recipes in order to make meals that were delicious, healthy and easy. I was so excited about doing this that I started sharing my discoveries with family and friends. I had no idea at the time that this hobby would give me the opportunity to show so many people how easy this is to do as a cooking instructor for the past six years.

I am happy to share my recipe for Seared Pork Tenderloin with Raspberry-Chipotle Glaze with you. Lean pork tenderloin is perfectly seasoned with Herbs de Provence, pan-seared to create a caramelized crust and quickly oven-roasted to finish cooking. Sliced and drizzled with the spicy-sweet and smoky glaze, this dish will soon become one of your favorites too. A sweet potato and green salad completes this delicious and healthy meal in no time.

Ingredients:

For the raspberry-chipotle glaze:

1 tablespoon extra virgin olive oil

2 garlic cloves, pressed

1/2 cup seedless raspberry preserves

2 tablespoons chopped chipotles in adobo sauce

2 tablespoons red wine vinegar

For the pork tenderloin:

2 tablespoons extra virgin olive oil

2 teaspoons garlic powder

2 teaspoons Herbs de Provence

1/2 teaspoon salt

1/4 teaspoon fresh ground pepper

2 whole pork tenderloins (1 to 1 1/4 lb. each), trimmed of fat

Instructions:

1. Pre-heat the oven to 375 degrees.

2. Prepare the glaze.

3. Sauté garlic in the oil in a small pot on medium heat until it begins to soften.

4. Add preserves, adobo, vinegar and stir.

5. Season with salt and pepper to taste.

6. Heat the glaze until it bubbles. Cover and keep warm.

7. Prepare the pork.

8. Rub pork with oil and sprinkle with seasonings.

9. Heat an ovenproof fry pan on the stove to medium-high heat.

10. Sear pork on all sides until brown and crusty.

11. Remove the pan from the stove and place in the oven.

12. Roast for 15 minutes or until the internal temperature reaches 155 degrees and juices run clear.

13. Remove pork from the pan, cover with foil and let rest for 10 minutes

14. Slice the pork, plate and drizzle with the warm glaze.

15. Enjoy!

Note: You can also use the glaze on chicken, beef and shrimp. Try it as a barbeque sauce basting during the last few minutes of cooking.
